Chicken Tagine
An easy tagine of chicken with preserved lemons and green olives, without using salt due to saltiness of the preserved lemon.

Ingredients
- 1 chicken, cut into quarters
- ½ preserved sliced lemon
- 1 tablespoon vegetable oil
- 1 tablespoon olive oil
- ½ chopped onion
- 2 garlic cloves
- 1 tablespoon chopped parsley
- ¼ teaspoon ground ginger
- ¼ teaspoon ground turmeric
- ¼ teaspoon ground pepper
- ¼ teaspoon saffron
- ½ cup water
Steps
- In tagine plate, combine chicken, onion, garlic, spices and the preserved lemon.
- Cover the tagine and cook it on medium heat for 20 minutes.
- Add some of water and continue cooking for 30 minutes until chicken is done.
- Add green olives and continue cooking for 10 minutes.
- Garnish with fresh parsley and serve it hot.
